CHICKEN FETTUCINI ALFREDO

INGREDIENTS: | |
1/4 cup | butter |
1/4 cup | olive oil |
1 lb. | Boneless,skinless chicken breasts, cut into slices |
1/2 cup | chopped green onion tops |
2 cloves | garlic, minced |
1 cup | milk |
1 pkg. | Alfredo sauce |
12 oz. | Fresh mushrooms, (optional) |
1(15oz) can | tomatoes, drained and chopped |
1 tsp | salt |
1/2 tsp | pepper |
2 tbsp | dried basil leaves |
1 lb. | Hot,cooked fettucini |
1/2 lb. | Freshly grated Parmesan cheese |
DIRECTIONS:
Melt butter and olive oil in large skillet over medium heat. Add chicken, green
onion and garlic; sauté until chicken is cooked through. Stir in milk,sauce
mix,mushrooms,tomatoes,salt and pepper. Bring to a boil,reduce heat and
simmer 3-5 minutes or until sauce has thickened. Stir in basil. Remove from
heat. Toss with pasta. Sprinkle with Parmesan cheese.
