Hot Pepper Chicken

Ingredients:
    12 oz  boneless, skinless chicken breast
    2 tbsp  flour
    1/2 tsp  crushed red pepper
      Salt, to taste
      freshly ground pepper, to taste
    1 tbsp  olive oil
    2 tbsp  honey
    2 tbsp  Dijon mustard
Sweet pepper potatoes:
    1/2 lb  sweet potatoes, peeled and cut into 1-inch pieces
    1 medium  red bell pepper, seeded and cut into 1-inch pieces (about 1 cup)
    2 tsp  olive oil
      Salt
      freshly ground pepper

Method:

1.Place chicken between 2 pieces of wax paper. Flatten with a mallet to about 1/2-inch thick.
2.Mix flour, red pepper and salt and pepper to taste.
3.Heat oil in a non-stick skillet on medium-high heat.
4.Coat chicken well with spice mixture and sauté about 3 minutes per side, until no longer pink inside.
5.Meanwhile, mix honey with mustard.
6.Plate chicken and spread with sauce.
7.Sweet pepper potatoes: Place potato and bell pepper in a microwave-safe bowl.
8.Cover with plastic wrap or a plate.
9.Microwave on high 5 minutes.
10.Let stand 1 minute.
11.Uncover potatoes, drizzle with olive oil and season to taste with salt and pepper.
