Slow cooker beans

1 lb | dried beans. 1 bay leaf |
1 garlic clove peeled but left whole. 1/2 cup molasses | |
2 tbsp | cider vinegar. 1 tbsp dried mustard |
1/4 cup | brown sugar. Freshly ground pepper |
1/4 cup | tomato paste. 1 small onion peeled but whole |
4 slices | bacon chopped. 1 tsp salt |
Extra molasses to finish
Soak beans overnight in cold h2o. Drain and put in saucepan with bay leaf and garlic clove cover with cold water and bring to boil simmer 30 min . Drain and put in slow cooker. Add molasses ,vinegar sugar,pepper and tomato and stir to combine. Tuck the onion into beans and scatter chopped bacon over the top. Do not add salt yet. Pour enough water in to cover beans and cook on high heat for 4-5 hrs or low heat for 6-7 hrs . Remove lid if sauce to runny so steam can escape. Gently stir in salt and add extra molasses if desired
