Meexican grilled corn

4 ears | fresh corn |
2 tablespoons | canola oil |
2 teaspoons | chili powder, divided |
1 teaspoon | kosher salt, divided |
1/4 teaspoon | pepper |
2 tablespoons | light mayonnaise |
1 tablespoon | cilantro herb paste, (or finely chopped cilantro) |
1 1/2 tablespoons | sour cream |
1 tablespoon | fresh lime juice |
Prep
Preheat grill.
Remove husks and silks from corn.
Steps
Combine in microwave-safe bowl, oil, 1 teaspoon chili powder, 1/2 teaspoon salt, and pepper; add corn, turning to coat evenly. Cover and microwave on HIGH 7–8 minutes or until tender.
Combine in medium bowl, mayonnaise, cilantro, sour cream, lime juice, 1 teaspoon chili powder, and 1/2 teaspoon salt; set aside.
Place corn on grill; grill 3–5 minutes, turning often. Toss corn with mayonnaise mixture and serve.
