Creamy Rice Pudding

250 g | arborio rice |
500 ml | water |
Pinch | salt |
Lemon rinds of a whole lemon | |
2 | cinnamon sticks |
50 g | butter |
1250 ml | milk |
300 g | sugar |
6 | egg yolks |
1 cup | milk |
Powdered cinnamon to taste |
Place water, salt & rice in a pan over medium heat & cook until all the water has evaporated.
Them add the butter, cinnamon sticks, lemon rind and 1250 ml of milk and cook for 30 minutes, stirring occasionally to keep rice from sticking
Then add sugar and stir
Then whisk the 1 cup of milk into the egg yolks until well blended, then add them to the pot and stir.
One the mixture is bubbling, turn the heat off and pour the rice pudding into the serving platter/containers.
