Mix flour and corn meal half and half – for every cup of mix add two tablespoons of Tony Chacheres Cajun Seasoning.

Sprinkle quail with Tony Chacheres before cooking. Then dip in mix, let sit for a while, and dip again right before frying.

Fry for 6 minutes or so on medium to medium high heat (around six to six and one half on the stove dial) in one inch of oil, covering one side of the quail, and then turn and fry another six minutes or so.
