4 cups | sugar |
1 cup | light corn syrup |
3/4 cup | water |
1/8 tsp | salt |
3 | egg whites |
1 tsp | vanilla |
Set microwave on high. Combine sugar, corn syrup, water and salt in a 2 quart casserole dish. Cook in microwave for 19 minutes stirring every 5 minutes until mixture reaches 260 degrees on a candy thermometer.
Beat the egg whites until very stiff. Pour hot syrup gradually over egg whites beating at high speed for about 12 minutes or until thick and candy begins to loose its gloss. Fold in vanilla. Drop by teaspoonful onto wax paper.
Makes about 2 dozen.
