    1 cup  apricots, fresh, pitted and finely diced
    1/4 cup  shallots, finely chopped
    1/4 cup  roasted red pepper, drained and diced
    3 tablespoons  fresh basil, diced
    1 cup  pistachios, natural, unsalted, toasted and coarsely chopped
    1-2 teaspoons  apple cider vinegar
    2 tablespoons  pistachio oil
    dash  cayenne
      salt and pepper to taste

Mix everything together and season to taste with salt and pepper.
