APRICOT, PISTACHIO and RED PEPPER SALSA

1/4 cup | shallots, finely chopped |
1/4 cup | roasted red pepper, drained and diced |
3 tablespoons | fresh basil, diced |
1 cup | pistachios, natural, unsalted, toasted and coarsely chopped |
1-2 teaspoons | apple cider vinegar |
2 tablespoons | pistachio oil |
dash | cayenne |
salt and pepper to taste |
Mix everything together and season to taste with salt and pepper.
