Ginger Chicken

12 oz | chicken breast |
1/2 T | vegetable oil |
1 t | garlic, minced |
1 T | ginger, chopped |
1 medium | onion, cut into wedges |
1 large | red bell pepper, cut into wedges |
2 cups | broccoli florets |
1/2 cup | low sodium chicken broth, divided |
2 T | low sodium soy sauce |
2 cups | brown rice, cooked |
Slice chicken into strips. Heat oil in a skillet over med-high heat; add chicken and saute for about 5 mins. Remove from pan and set aside.
Add garlic, ginger, onion, red pepper, broccoli, and 1/4 cup broth. Saute until crisp and tender, about 5 mins.
Stir arrowroot powder into remaining broth and sauce.
Return chicken to pan, add soy mixture and bring to a boil, stirring until sauce thinkens slightly, Cook one minute longer. Serve w/rice.
