Chicken Almondine w/Lemon Green Beans

Yield: 4 oz. chicken; 1/2 T nuts, 3/4 cup beans

1/8 cup | slivered almonds, toasted |
1/8 cup | almond meal |
1 T | whole-wheat flour |
1/4 t | paprika |
1 lb | chicken breasts, (4), pounded to 1/2" thickness |
1 lb | green beans |
2 t | lemon zest |
1 T | lemon juice, (from 1/2 lemon) |
Combine almond meal, flour and paprika. Season w/salt and pepper. Dredge chicken breasts in almond-flour mixture.
Heat skillet for 1 minute. Mist with cooking spray and reduce to med-high heat. Saute chicken for 3 mins per side until done and golden brown.
Boil med pot of water. Add beans and cook for 1 minute; blanche. Toss beans w/lemon zest and juice, season w/salt and pepper.
To serve, sprinkle almond slivers over chicken and 3/4 cup beans.
