Brown eye round roast in Dutch oven in small amount of olive oil, remove Saute 1 large onion and 6 cloves garlic, chopped, in drippings Add 1 c peeled, fresh or canned tomatoes, chopped Put roast back in pan and cover with water Add: | |

nutmeg, to taste | |

paprika, to taste |
Cover and cook at least 4 hours
Remove roast and slice
Blend sauce in blender and pour over roast
Cover and cook until tender
Uncover and cook until sauce thickens
