INDIVIDUAL PECAN PIES Crust | |
1 3 oz. pkg. | cream cheese |
1/2 cup | butter |
1 cup,1 T. | all-purpose flour, sifted |
Filling | |
1 | egg, beaten |
1/2 cup | dark brown sugar |
1/4 cup | sugar |
1 tablespoon | butter, melted |
1 teaspoon | vanilla |
3/4 cup | pecans, chopped |
1/8 teaspoon | salt |
CRUST:
WITH SPOON, COMBINE CREAM CHEESE, BUTTER AND FLOUR UNTIL WELL MIXED. PRESS MIXTURE WITH FINGERS INTO WELL BUTTERED 1-INCH MUFFIN PANS, COMPLETELY COVERING SIDES.
FILLING:
COMBINE THE ABOVE INGREDIENTS WITH A SPOON. SPOON FILLING INTO 1-INCH MUFFIN PANS, FILLING THEM TO THE TOP. BAKE IN 350° OVEN FOR 25 MINUTES OR UNTIL GOLDEN BROWN. COOL 5 MINUTES. REMOVE FROM PANS WITH A POINTED KNIFE BEING CAREFUL NOT TO BREAK CRUST. MAKES 24 INDIVIDUAL PIES.
