Pesto Coins | |
1 cup | softened butter |
8 oz | parmesan cheese grated |
3 | garlic cloves |
½ cup pine nuts – chopped and toasted | |
1 tbsp | chopped fresh basil |
¼ tsp | ground red pepper |
2 cups | all purpose flour |
¼ | pine nuts |
Beat butter and cheese at med speed with mixer until blended. Add garlic and next 3 ingredients. Gradually stir in flour with spoon ( crumbly) stir until mixture is blended and smooth. 2-3 mins or press mixture until blended and smooth.
Shape dough into 8 x6inch logs. Wrap each log in plastic wrap and chill 8 hours.
Remove wrap, cut into 1/3 inch slices. Place on baking sheet. Press 1 pine nut in to center of each dough slice.
Bake at 350F for 15 – 18 mins or until lightly brown. Cool
