Tomato Soup
    2 tbsp  olive oil
I onion chopped
    1  carrot chopped
    1 tbsp  plain flour?j
    1 x 400g  can chopped tomatoes
    600ml /1 pt  veg stock
    1 tbsp  tomato puree
    1 tsp  sugar
      Croutons
    1 thick slice  white bread
    1 tbsp  olive oil

Heat oil in pan over low heat
Add onion at carrot
Cover and cook 5 mins until veg is soft
Add flour, cook, stir for 1 min
Stir in tomatoes, veg stock tomato puree and sugar
Bring to boil stirring constantly
Reduce heat, cover simmer for 20 mins stirring occasionally

Pre-heat oven to 200C
Cur bread into small cubes
Place on lightly oiled baking tray
Drizzle over the oil Bake for 10 min turning once.
