Tomato Soup

Tomato Soup | |
2 tbsp | olive oil |
I onion chopped | |
1 | carrot chopped |
1 tbsp | plain flour?j |
1 x 400g | can chopped tomatoes |
600ml /1 pt | veg stock |
1 tbsp | tomato puree |
1 tsp | sugar |
Croutons | |
1 thick slice | white bread |
1 tbsp | olive oil |
Heat oil in pan over low heat
Add onion at carrot
Cover and cook 5 mins until veg is soft
Add flour, cook, stir for 1 min
Stir in tomatoes, veg stock tomato puree and sugar
Bring to boil stirring constantly
Reduce heat, cover simmer for 20 mins stirring occasionally
Pre-heat oven to 200C
Cur bread into small cubes
Place on lightly oiled baking tray
Drizzle over the oil Bake for 10 min turning once.
