INGREDIENTS:
    3 cups  cauliflower, broken into florets
    2 cups  potatoes, cut into half-inch cubes
    1 1/2 cups  onion, thinly sliced
    1 1/2 cups  tomatoes, finely chopped
    1/8 tsp.  cumin seeds
    1/2 tbsp.  red chili powder
    1/8 tsp.  turmeric powder
    2 small  tomatoes, quartered
    1 tsp.  garam masala
    1 cup  fresh cilantro, chopped
    1 tbsp.  tomato paste
      salt to taste
    3 tbsp.  olive oil

Heat oil in frying pan over medium heat. When hot, add cumin seeds. When cumin seeds sizzle add onions, stir and fry until they are golden brown. Add chopped tomatoes, tumeric, and red chili pepper. Stir and continue to fry until tomatoes are soft and oil separates from the mixture. Now add garam marsala powder, tomato paste and salt. Stir the mixture. Stir in potatoes and cook until half done. Add cauliflower, stir and cover with a lid. Cook the cauliflower so that it is still crunchy. Avoid overcooking. Add the tomato chunks and cilantro. Mix well and serve hot (optionally with roti bread)
