Ida's Peanut Butter Fudge - Dairy Free Version

4 cups | granulate sugar |
1 cup | plain soy milk |
1 tsp | vanilla |
2 cups | peanut butter |
Use soy butter to butter 9 x 13" baking dish. Over low to medium heat melt sugar with soy milk. Bring to "rolling" boil for 4 minutes. Remove from heat and add vanilla and peanut butter stirring until smooth. Pour into baking dish and allow to cool completely before cutting and serving.
