      Yield: 1 (4 block) meal or 4 (1 block snacks)
    12  cashews
    1/4 cup  filtered water
    1 1/3 ounces  vanilla egg white protein or whey protein
    1/8 teaspoon  ground nutmeg
    1/8 teaspoon  cinnamon
    1  teaspoon pure vanilla extract in nonalcoholic base or 1/2 teaspoon pure vanilla in alcohol
    2   teaspoons apple fiber powder (optional)
    1 cup  sliced frozen peaches
    3/4 of 12 ounce   package frozen, pitted, unsweetened sweet cherries (such as Big Valley) about 1 cupful
    1 teaspoon  pure vanilla extract, in nonalcoholic base or 1/2 teaspoon vanilla in alcohol
    2   ice cubes (optional)
    1/16 teaspoon  stevia extract powder or 2 to 3 drops stevia extract liquid, (optional)
      Cherry, Peach and Cashew Pops: Yields 4 (1 block) snacks. Pour blended mixture into 4 small paper cups or Popsicle molds. Freeze until firm. If using paper cups, place a stick in each cup once after 1 to 2 hours, when mixture has started to ice up; then continue to freeze or serve the mixture with spoons. Allow cups to rest at room temperature for 10 minutes before serving or run under warm water to loosen Popsicles.
Instructions: Combine cashews, water, protein powder, nutmeg, ginger, vanilla, and fruit in blender. Add apple fiber if possible. Cover and process until smooth, stopping to scrape down sides with spatula. Add ice, one cube at a time as/if needed to create a thick, frosty texture. Taste and add 1/16 teaspoon stevia extract powder Pour and scrape into 1 tall glass for a meal, or 4 cups for snacks, and serve immediately. Or pour into one or more wide-mouth thermos bottles and chill or freeze for later. Variation
