Turkey Frame Soup

1 | meaty turkey frame |
6 quarts | water |
1 | onion, quartered |
3 | tomatoes, quartered or 16 oz. can tomatoes, cut up |
1 tsp | dried thyme, crushed |
1/2 tsp | dried oregano, crushed |
1 | turnip, (8 c. total cubed vegetables) |
1 | rutabaga |
3 stalks | celery |
3 | carrots |
2 | parsnips |
2 | leeks |
1 | celery root |
2 cup | barley, or 3 c. uncooked noodles |
Place turkey frame in large pot with onion, water and 4 teaspoons salt. Bring to boiling, reduce heat and simmer, covered, 1 1/2 hours. Remove frame, cool until it can be handled. Remove meat from bones; discard bones. Add turkey meat, tomatoes, thyme and oregano to broth. Stir in vegetables. Bring to boiling; cover; simmer 45 minutes. Add noodles. Simmer 10 to 15 minutes.
