Standing Rib Roast

    6 pound  rib roast
    2 Tbs  butter

Preheat oven to 450 degrees.

Bring roast to room temperature, about 2 hours ahead of time (very important!).

Pat the roast dry and rub the ends with butter.

Roast for 15 minutes at 450 degrees, then lower the temperature to 325 degrees. Baste every 1/2 hour with any accumulated fat.

It will take about 2-3 hours to cook.

Roast until the instant read thermometer reads 120 degrees, then remove from oven and rest covered with aluminum foil.

Serve with Sour Cream Horseradish Sauce or Garlic Blue Cheese Sauce.
