Savory Corn and Vegetable Pudding with Carmelized Apples and Rosemary Pork

This custard-based corn pudding can be cut into squares and served warm over a salad for a lunch or brunch. Here it is used as a centerpiece of an early autumn dinner with a layer of savory Cheddar cheese. Both the pudding and the yams can be made the day before and reheated. Cut the pudding when cold for best presentation. Pork is optional. | |
6 Tbs | butter |
1/2 Large | Onion, diced |
2 Large | Carrots, diced |
1/2 Lb | Mushrooms, quartered |
1 Lb | White Bread, crust removed, cut into 1/2" dice |
10 ears | Corn, kernels cut off (about 5 cups) |
2 Tbs | Flat-leaf parsley |
2 tbs | salt |
1 tsp | ground pepper |
8 | eggs |
4 cups | milk |
6 oz | Cheddar cheese, grated |
1 | Carmelized Apples and Yams |
1 | Rosemary Pork, (optional) |
1 Heat oven to 350°. Grease a deep 9x13" pan. Melt 4T of the butter in a large saucepan and add the onion, carrots and mushrooms. Over medium-low heat, gently stew the vegetables until they are tender, about 12 minutes.
2 Melt the remaining 2T butter and drizzle over the bread cubes, toss well, and spread the cubes on a baking sheet. Toast them in the oven until lightly browned, 10-15 minutes, turning once.
3 Combine the toasted bread cubes with the stewed vegetables, corn, and parsley. Season with salt and pepper and spread in the prepared baking dish. Whisk together the eggs and milk; pour over the bread and vegetables. Leave the mixture to soak for 10 minutes, pressing down on the bread with your hands occasionally to encourage it to absorb the custard.
4 Distribute the cheese over the top. Bake until a knife inserted in the center comes out clean, about 1 hour. Let stand 10 minutes before cutting into portions.
5 Spoon the Carmelized Apples and Yams onto serving plates. Rest a 3- or 4-inch square of corn pudding on one side, and arrange slices of Rosemary Pork (optional) along one or both sides of the pudding.
