Masaman Curry

1 lb | chicken, cut into chunks |
3 tbsp | raw peanuts |
1-2 | potatoes, cut into chunks |
1 tbsp | oil |
3 tbsp | masaman curry paste |
1 can | coconut milk |
2 tbsp | fish sauce |
1 tsp | palm sugar |
1 tsp | lime juice |
1/4 tsp | paprika powder |
1/4 | onion, cut into pieces |
1. Cook chicken and peanuts in boiling water for about 20 minutes.
Add potatoes; cook until tender. Drain.
2. Stir-fry curry paste and 4 tbsp coconut milk in oil. Add everything but onion and cook about 10 minutes. Add onion and cook until tender. Add chicken mixture and simmer for a few minutes.
Serve over rice.
