BULGUR & POPPY SEED PILAF

2 tbls | fresh ginger, finely chopped |
2 tbls | fresh garlic, finely chopped |
1/2 tsp | olive oil |
2 cups | water |
1 cup | bulgur, rinced |
1/4 cup | poppy seeds, lightly toasted |
1/4 cup | dried apricots, chopped |
1/4 cup | goat cheese, crumbled |
salt and pepper |
Sautée ginger and garlic in oil in a small heavy saucepan over medium heat, until golden.
Add bulgur, water and a 1/2 teaspoon salt. Simmer, covered, until liquid is absorbed, about 15 minutes. Remove from heat and let stand, covered, 5 minutes. Add poppy seeds, apricots and goat cheese. Season with salt and pepper.
Fluff with a fork before serving.
