Spinach and Ricotta Dip

1 t | olive oil |
3 cloves | garlic |
1 | leek, thinly sliced |
2 large bunches | spinach |
1 cup | fat free ricotta cheese |
1/2 t | sea salt |
1/4 t | nutmeg |
Coat saute pan with oil and set over medium heat. Add garlic and leek. Stir often until soft, 6-8 minutes. Add a few drops of water if leeks brown too fast.
Increase heat to med-high and add spinach. Stir until wilted. Process until desired consistency and regrigerate until cool.
Stir spinach with ricotta, sea salt and nutmeg. Stir before serving.
