Pumpkin Bars

    4  eggs
    1 2/3 cup  sugar
    1 cup  canola oil
    1  16 oz. can pumpkin
    2 cups  flour
    2 teaspoons  baking powder
    2 teaspoons  cinnamon
    1 teaspoon  baking soda
    3 oz.  cream cheese, For icing
    1 teaspoon  vanilla, For icing
    1/2 cup  butter , For icing
    2 cups  powdered sugar, For icing
    1/4 to 1/2 cup  chopped walnuts, For icing (optional)

With mixer at low speed, beat together eggs, sugar, oil and pumpkin until light and fluffy. Stir together flour, baking powder, cinnamon, salt, and baking soda. Add to pumpkin mixture and mix thoroughly. Spread in 15 x 10 x 1 pan and bake at 350 degrees for 30 minutes OR you can use a 9 x 13 pan and bake for 40 minutes or until a knife inserted comes out clean.

Icing 1 - 3 oz. cream cheese 1 teaspoon vanilla ½ cup butter 2 cups sifted powdered sugar

Leave butter and cream cheese at room temperature until softened. Cream together cream cheese and butter. Stir in vanilla. Add powdered sugar. Spread on cooled pumpkin bars and sprinkle with chopped walnuts.
