Chicken, Apple and Cheese Panini with Caramelized Onions

1 t | olive oil |
1 cup | sliced onion |
1 large | apple, ambrosia thinly sliced tossed in lime juice |
1 cup | spinach leaves |
4 oz. | low fat swiss cheese slices |
8 slices | whole wheat bread |
16 oz. | chicken breast |
Saute onions until caramelized. Set aside. Cook chicken breast and slice.
Assemble sandwich; grill for a few minutes on each side.
