Chicken Fried Chicken with Mushroom Gravy

1/2 oz. | dried mushrooms, porcini or shiitake |
1 lb. | chicken breast, trimmed of fat and cut into 4 oz. pieces. |
3 T | whole wheat flour |
2 large | egg whites |
1/2 cup | whole wheat bread crumbs |
1 T | dried minced onion |
1 t | dried oregano |
1 t | dried thyme |
1/2 t | garlic powder |
2 t | olive oil |
6 oz | crimini mushrooms, thinly sliced |
1 cup | low sodium chicken broth |
1/2 cup 1% | milk |
Pour 1/2 cup boiling water over dried mushrooms. Let stand 10-15 minutes. Pound steaks into 1/4". Season both sides with salt and pepper. Place 2 T flour in a shallow dish and egg whites into a separate dish. Combine breadcrumbs with dried herbs and place into a third dish.
Coat steaks with flour. Transfer to egg whites. Coat with breadcrumbs. Heat 2 T oil on medium-high heat. Cook steaks for 2-3 minutes per side.
Prepare gravy (start early, takes a while): Drain mushrooms and chop. Heat medium sauce pan over med.-high heat. Add chopped mushrooms and saute for 3-5 minutes. Add broth and simmer. In a medium bowl, whisk milk and 1 T flour. Add milk mixture to mushrooms and simmer 3-5mins. until thick.
