Chicken Coconut Soup

2 T | olive oil |
1 clove | garlic, minced |
1 medium | onion, chopped |
1 cup | carrot, chopped into 1/2" pieces |
1 cup | small red potatoes, chopped into 1/2" pieces |
1.5 cups | low-sodium chicken broth |
1/2 cup | light coconut milk |
1/2 cup | skim milk |
16 oz. | chicken breast |
1/2 cup | snow peas, cut lengthwise |
1 t | lemon juice |
4 T | cilantro, chopped |
Heat oil over medium. Add garlic, onion, carrots, and potatoes. Season with salt and pepper and saute onions until translucent. Add broth and coconut and skim milk. Bring to a light boil. Add chicken, cover and let simmer for 12 minutes over med-low heat. Remove chicken and set aside. Add peas to soup. Simmer for 2-3 minutes. When cooled, slice chicken amd add back to soup. Add lemon juice and cilantro.
