Chicken & Portobello Focaccia Sandwich

8 oz. | chicken breast |
1 medium | portobello mushroom, (4 oz.) |
1 T | fresh rosemary |
1 t | fresh thyme |
1 t | olive oil |
1 t | balsamic vinegar |
2 3-oz. | whole wheat focaccia bread, (about 4" x 5") |
4 oz. | part skim mozzarella cheese, thinly sliced |
1 large | tomato, sliced |
2 small | scallions, chopped |
1/2 c | fresh basil, thinly sliced |
Preheat oven to 400 degrees. Slice chicken and mushrooms into 1/2" strips. Sprinkle with rosemary and thyme. Stir oil and vinegar into small bowl and sprinkle on chicken and mushroom. Roast for 15 minutes. Toast focaccia. Assemble sandwich.
