Barbar'a Biscottis

Barbara's Biscottis "Anicini" 2+1/2 c. Unbleached Flour | |
1 tsp. | Baking powder |
1/4 tsp. | Salt |
1 Tbsp. | Aniseeds |
1+ 1/2 c. Almonds (it calls for raw but we toasted them; 350 degrees F. for 15 minutes)
Mix all of the above in a large bowl & set aside)
In your mixer bowl add:
1 stick, (1/4 pound, 1/2 cup), at room temperature
Beat until fluffy~ 5 minutes
Slowly add in 1+ 1/4 c. Sugar
Continue to beat until fluffy
Add 3 eggs - 1 at a time; beating well after each one.
Mix in: 1/2 tsp. Vanilla & 1/4 tsp. Anise extract.
Line the cookie sheet(s) w/ parchment paper.
Scoop out dough onto a floured surface. Divide into fourths
Roll each fourth into a 12" x 1+/2" log.
Place each log on the cookie sheet at an angle.
Bake at 375 degrees for
Remove from oven & let cool for 10 minutes. With a very sharp knife cut the still warm Biscottis at an angle. Lay them out on the cookie sheet on their sides, ( flat side down & up).
