Salmon and Mushroom in wine sauce

1Lb. | Salmon filet |
3/4 Lb. | Baby new potatoes halved |
1 Lb. Portabello Mushroom cubed 1" | |
2Tbs. | Garlic minced |
1/2 tsp. | Rosemary ground or 1tsp fresh minced |
1-2Tbs. | Butter |
1-2Tbs. | Olive oil |
Coarse Salt | |
1/2C. | Red wine Cab, Merlot or Pinot. |
1 lemon juiced
In med. Dutch oven coat bottom with olive oil add salmon and line the edges of pot with potatoes.
Salt both salmon and potatoes. Add 1/2 lemon to salmon and put Rosemary on potatoes. Add mushrooms sprinkle with garlic and remainder of lemon. Sprinkle with salt, add wine and top with butter.
Place cover and cook at 350* for aprox. 45min.
Prep. 10 min.
Note: use I nice quality wine so you can enjoy the balance of the bottle while it is cooking.
