Apple Crisp

3 | green apples, peeled, cored and cut into thin slices |
1 tsp. | cinnamon |
2 tsp. | butter |
2 tsp. | sugar |
1 tsp. | lemon juice, freshly squeezed |
crumb topping: | |
1c. | whole wheat flour |
3/4 c. | rolled oats |
2 tsp. | flaxseed, ground |
1/4 c. | packed brown sugar |
1/2 tsp. | cinnamon |
1/2 c. | cold butter, cut into pieces |
Preheat oven to 350 degrees
Mix dry ingredients of crumb topping. Cut in butter until crumbles form. Refrigerate until ready to use.
In a large saute pan, melt 2 tsp. butter and add cinnamon, sugar and lemon juice. Add apples and saute until soft.
Add apples to baking dish. Cover with crumb topping. Bake until crumble is browned, about 20 minutes.
For a variation: add 1/2 c. dried cramberries to apple mixture.
