Karen's best Do Ahead Gravy

1 T | vegetable oil |
2 turkey wings, (1 1/2 lbs) | |
1 lge | onion, quartered |
2 | carrots, each cut in 4 |
2 stalks | celery, each cut in 4 |
1 | garlic clove, sliced in half |
1/2 cup | dry white wine |
2 cans (14 oz each) | broth, 1 box |
1/4 tsp | dried thyme |
1/2 cup | flour |
In skillet, heat oil over med-high. Add wings and cook 10 mins until gold.
Add vegetables, and cook 8-10 mins until all gold.
Transfer turkey and veg to a bowl.
Add wine. Deglaze. Stir in broth, thyme and 3 cups water. Boil. Reduce heat and simmer uncovered for 45 mins.
Strain. Discard solids.
Separate fat. Spoon 1/4 cup fat onto 2-qt pan. Discard remaining fat.
Add flour and stir until brown. Gradually whisk in reserved broth and cook until thickens stirring constantly. Cover and refrigerate.
Reheat and serve with turkey.
