D11 L Chicken Waldorf Salad

2 cups (500ml) | water |
200g | chicken breast fillet |
1/4 cup (70g) | skim-milk yogurt natural |
2 tablespoons | lemon juice |
1 teaspoon | wholegrain mustard |
1 | red apple, (130g), small sliced thinly |
3 | celery stalks, (300g), trimmed sliced diagonally |
2 tablespoons | fresh flat-leaf parsley coarsely chopped |
Method
1 Bring the water to the boil in a medium saucepan; add chicken. Simmer, covered, about 10 minutes or until chicken is cooked.
Cool chicken in poaching liquid for 10 minutes; drain, then slice thickly.
2 Meanwhile, combine yogurt, juice and mustard in medium bowl. Add apple, celery, parsley and chicken; mix gently
If you're taking this salad to work, make sure the apple is coated with the dressing to stop the flesh discolouring.
