    2 cups (500ml)  water
    200g  chicken breast fillet
    1/4 cup (70g)  skim-milk yogurt natural
    2 tablespoons  lemon juice
    1 teaspoon  wholegrain mustard
    1  red apple, (130g), small sliced thinly
    3  celery stalks, (300g), trimmed sliced diagonally
    2 tablespoons  fresh flat-leaf parsley coarsely chopped


Method

1 Bring the water to the boil in a medium saucepan; add chicken. Simmer, covered, about 10 minutes or until chicken is cooked.
Cool chicken in poaching liquid for 10 minutes; drain, then slice thickly.

2 Meanwhile, combine yogurt, juice and mustard in medium bowl. Add apple, celery, parsley and chicken; mix gently

If you're taking this salad to work, make sure the apple is coated with the dressing to stop the flesh discolouring.
