Barbecued Tofu Salad

2 packages | extra-frim tofu, pressed, cut into 1/2" squares and marinade in vinaigrette for 30 min. |
1/2 cup | barbecue sauce |
2 cups | canned corn |
2 cups | pinto beans |
1/2 | yellow onion , diced |
1 | red bell pepper, diced |
1 | romaine lettuce |
Vinaigrette | |
1/4 cup | olive oil |
1/4 cup | lemon juice |
1/4 cup | orange juice |
1 tbls. | agave nectar |
2 cloves | garlic |
3 dashed | hot sauce |
Grill or pan sear the tofu after covering with BBQ sauce
Combine Vinagrette ingrediants and blend smooth
Combine remainder of ingrediants except lettuce
Add to lettuce just before serving
