Curried Carrot, Sweet Potato & Ginger Soup

This soup gets its wonderfully creamy texture from pureed carrots & sweet potatoes rather than cream. | |
2 tbs | olive oil |
½ cup | chopped shallots |
3 cups | sweet potato, peeled, 1/2" cubed |
1 1/2 cups | carrots, peeled, 1/4" sliced |
1 Tbs | grated ginger |
2 tbs | curry powder |
3 cups | chicken broth |
½ tsp | salt |
1 Heat oil in a large saucepan over medium-high heat. Add shallots; sauté 3 minutes or until tender. Add potato, carrots, ginger & curry; cook 2 minutes. Add broth; bring to a boil. Cover, reduce heat & simmer 25 minutes or until vegetables are tender; stir in salt.
2 Pour half of soup in a food processor; pulse until smooth. Repeat procedure with remaining soup.
