Cranberry Salad

4 3-oz pkgs | cherry or blackberry jello |
2 cups | boiling water |
½ cup | cold water |
2 cups | fresh cranberries, (1 pkg) |
1 cup | pecans |
2 | oranges, unpeeled, seeded |
2 | apples, unpeeled, cored |
2 cups | sugar |
1 lg | can crushed pineapple, with juice |
Dissolve gelatin in boiling water. Add cold water & chill until consistency of egg white. (Apparently this is important as to whether is sets up correctly or not... no pressure though). Combine cranberries, pecans, oranges, apples & sugar in food processor. Pulse several times. Fold into gelatin mixture. Add pineapple with juice. Pour into a 10-cup mold (or 2 smaller ones) and chill until set.
