Chocolate Volcano Cakes

4 oz | butter |
8 oz | unsweetened chocolate |
4 | eggs, separated |
3/4 cup | sugar |
1/8 cup | flour |
1/4 cup | sugar |
pinch | salt |
pinch | cream of tartar |
1. Melt butter & chocolate in a double boiler
2. Whip the 4 egg yolks & 3/4 c. sugar until 2 shades lighter & creamy. Add flour gradually. Don't overwork.
3. Whip the 4 egg whites adding the pinch of salt. Gradually add the 1/4 c. sugar at the end, whisking to form firm peaks.
4. Add cream of tartar when whites are fluffy.
5. Fold 1/3 yolk mixture into chocolate. Fold in another 1/3. Fold final 1/3 very gently while scraping sides & bottom.
6. Fold whites into chocolate mixture by thirds gently scraping sides & bottom, eliminating any chunks of whites.
