Cedar-Planked Salmon

Marinade: | |
1 | orange, zested |
1/4 cup | brown sugar |
1/4 cup | kosher salt |
For grilling: | |
Olive oil | |
5 cloves | garlic, sliced |
2 | onions, sliced |
1 bunch | green herbs, (mint, basil, cilantro) |
1. Marinate salmon with zest, sugar & salt for 2-10 hours.
2. Start with a dry cedar plank. Oil plank with olive oil & lay down sliced garlic.
3. Lay salmon on plank & cover with herbs & sliced onion
4. Cook over high heat (on grill) for 10-15 minutes, letting plank catch on fire. Close grill lid to control fire & continue cooking.
5. Serve the entire plank with well-cooked onions & herbs.
