Cabbage Salad with Mustard Vinaigrette

1½ lbs | white or green cabbage |
½ lb | red cabbage |
½ cup | packed fresh flat-leafed parsley leaves |
1½ tsp | Dijon mustard |
2½ Tbs | red-wine vinegar |
¾ tsp | salt |
5 Tbs | extra-virgin olive oil |
1 Cut cabbage into thin shreds & chop parsley. In a small bowl, whisk together mustard, vinegar & salt until combined. Whisk in oil in a slow stream, whisking until emulsified.
2 In a large bowl, toss together cabbage, parsley, vinaigrette and salt & pepper to taste until combined.
3 Chill salad covered at least 30 minutes & up to 2 hours.
