Wild Rice - lemon pecan

1 /2 lemon rind | |
1 tbsp | lemon juice |
1 tbsp | unsalted butter |
1 cup(s) | wild rice, rinsed and draine |

1/2 cup(s) | pecans toasted and chopped |
3 tbsp | minced scallions |
1/4 cup(s) | minced parsley |
combine broth, half the rind, juice, and butter. Bring mixture to boil
and stir in rice. Cook rice, covered, over low heat, 50-60 min. or till
tender. Stir in the pecans, scallion, parsley, rind salt and pepper
