Salmon Chowder

6 strips | bacon |
2 large | onions |
1 cup(s) | diced celery |
4 large | russet potatoes |
4 | carrots |
4 cup(s) | chix broth |
1 cup(s) | whole milk |
1 cup(s) | half and half |
3 lb | salmon fillets in 1-inch |
1/2 cup(s) | parsley |
1--2 tsp dried dill | |
1 tbsp | chives |
Brown bacon. Saute onion and celery in fat until clear. Add potatoes and
saute 5 min. more. Add carrots and stock, bring to boil. Simmer until
vegies tender..
Add salmon parsley dill and pepper. Increase the broth
with some fish broth if necessary. Simmer 5-8 min or fish is
(almost?)cooked. Add milk and cream and bring to just below boiling.
Pepper and salt. garnish with bacon and chives.
