Fruit & Honey Oatmeal

    3 cups  tap water
    1-1/2 cups  dry quick cooking oatmeal
    1/3 cup  chopped dried fruit like dates, apricots, apples, prunes, cranberries, raisins, or whatever you have on hand
    1/4 cup  nuts, (optional)
    1/4 cup  honey
    1/2 teaspoon  salt
    1/2 teaspoon  cinnamon

Bring the water to a boil in a 2-quart saucepan. Gradually stir in the oatmeal. Add the dried fruit, honey, salt and cinnamon. Cook and stir the mixture for 2 or 3 minutes. Cover the oatmeal and remove the pot from the heat. Allow the mixture to sit for 5 to 10 minutes to finish cooking. Serve hot with milk or yogurt and a little brown sugar if desired.

To use old-fashioned oatmeal instead, replace the quick cooking oatmeal with an equal amount of old-fashioned oats. All of the other measurements remain the same. Cook the oatmeal for 5 full minutes and serve hot. Makes about 4 servings.

I have used 1/3-cup of sugar instead of the honey called for above with good results. Pancake Syrup, corn syrup, and molasses could all be used a substitute for the honey too. By the way, almonds and cranberries or dates and walnuts are both very good versions of this cereal.
