Pork roast with pears

3 lb | boneless pork roast |
2 tsp | thyme leaves |
1 tsp | rosemary leaves dried |
1/4 tsp | salt |
1/4 tsp | pepper |
2 tbsp | olive oil |
1/2 cup(s) | pecan halves |
2 medium ripe red pears sliced 1\4 i n. | |
1/2 tsp | dried thyme leaves |
2 tbsp | brandy, (or apple juice) |
1/4 cup(s) | parsley |
Heat oven to 325. mix all roast ing.-spoon oil mixtur over roast. bake
1 h. 30 min to1 hr 40min to 160.f- reserve pan juices. let roast stand 15
min. place pecans in roast pan. bake 10 15 min to roasted. Add enough
water to pan juices for .1-2 cup. put juices in skillet over med heat to
full boil. Add remaIning sauce ing. except 2 Tbsp. parsley. Continue
cooking pears until crispley tender. garnish with pecans + 2 Tbsp
parsley. Serve with sauce.
