Peach Crisp Oatmeal

Yield: about 4 servings depending on appetite
|3 cups||tap water|
|1-1/2 cups||quick cooking rolled oats|
|1/3 cup||chopped dried peaches or apricots|
|1/3 cup||brown sugar|
|1 or 2 tablespoons||margarine or oil|
|1/4 cup||chopped pecans or walnuts, (optional)|
Bring the water to a boil in a 2-quart saucepan. Gradually stir in the oatmeal. Add the peaches, brown sugar, margarine, salt, cinnamon and nuts, if you have any handy . Stir up the mixture and let it boil for a couple of minutes. Remove the pan from the heat and cover it with a lid or large skillet. Allow it to sit for 5 to 10 minutes to finish cooking. Serve hot, with milk.
To substitute old-fashioned oatmeal, replace the quick cooking oatmeal with equal amounts of old-fashioned oats. The other measurements remain the same. Cook the oatmeal for a full 5 minutes. There is no standing time, so serve it immediately to a hungry family. Makes about 4 servings depending on appetite.
