    2  eggs
    1  flour tortilla
    1 tbsp  tomato-based salsa
    1  spring onion
    ½  red pepper
    4  cherry tomatoes, additional
    1 tbsp  fresh coriander, additional
    1 serving  salad leaves, additional
    3 tsp  low fat salad dressing, additional

1. Slice the spring onions and red pepper, and chop the coriander. Combine these with eggs and lightly beat.
2. Heat a non-stick frying pan over a medium heat.
3. Pour in the egg mixture, swirling around the pan to cover the base, and cook gently until just set.
4. Heat the tortilla for 20 seconds in the microwave, or wrapped in foil in the oven, and then fill with omelette.
5. Top with salsa, roll up and serve.
