Orzo, Crab, and Tomato Salad

1/2 lb. | Orzo |
6 large | tomatoes, seeded and diced |
1 lb. | crabmeat, cooked and cooled |
1/2 cup | spring onions, chopped |
1 medium | cucumber, peeled, seeded and diced |
2 T | prepared horseradish |
juice of one lemon | |
1/2 cup | olive oil |
salt and pepper, to taste |
Cook orzo in pot of rapidly boiling salted water until al dente (about 8 minutes). Drain very well.
Combine orzo with all other ingredients.
Serve at room temperature.
