    500g  salmon
      salmon fillets, alternative
    3 tbs  olive oil
    100g  shallots
1 garlic. Chopped
    150g  spinach
    125g  soft cheese
    15g  dill chopped
    375g  ready rolled puff pastry
    1/2  lemon
    1  beaten egg

Preheat oven gas7. 220c fan 200c
Season, then place salmon on foil.
Drizzle 1tbs oil then wrap to seal. Roast on baking tray for 12-15 mins
Cool and flake.
In pan with medium heat, cook 2tbs oil with shallots for 5 mins.
Add garlic and cook 1 min.
Add spinach and stir till wilted.
Stir in cheese and dill.
Lin e a baking tray with baking parchment and put pastry on top.
Slice 2.5cm off shortest end.
Spoon spinach on one side of pastry, leaving 2.5cm at edges.
Top with fish and drizzle lemon over.
Fold pastry over, seal edges and crimp edges.
Prick the top.
Shape fish from spare pastry.
Brush with egg.
Bake 20-25 mins.
