| Healthy and Nutritious side dish for any dinner. A perfect savory sweet combination. A particular favorite for Thanksgiving in our house and kid approved! | |
| 1.5 lb | Sweet potatoes, peeled and cut |
| 4 large | carrots, peeled and cut into chunks |
| 3 medium | apples, peeled and diced |
| 2 tsp | olive oil |
| 1/2 tsp | cinnamon |
| 1/4 tsp | salt |
Instructions
Preheat the oven to 400F/200C
Get all your ingredients prepped and ready, cutting all the produce into chunks about the same size so they cook evenly
In a medium baking dish combine all ingredients, hand tossing to ensure even coating
Cover and bake for about 90 minutes -or until the veggies are fork tender and fall off the fork when pierced.
This dish pairs well with pork, chicken, and beef.
