Tarragon marinated mushrooms

Tarragon Marinated Mushrooms Ingredients: | |
16 oz | small white button, (or Cremini) mushrooms |
2 Tbsp | butter |
2-3 cloves | garlic, finely minced |
¼ cup | lemon juice |
¼ cup Tbsp | minced tarragon leaves |
3 Tbsp | white wine vinegar |
4+ Tbsp olive oil | |
1 tsp | salt |
½ tsp | black pepper |
Instructions:
Trim stems from caps and discard. Using a lightly-damp towel, gently wipe dirt from mushrooms. Leave small ones whole but cut larger ones to approximately the same size.
Heat 2 Tbsp butter with a little olive oil in skillet. Sauté mushrooms for about 3 minutes, then add minced garlic and toss for another minute, just enough to begin to soften mushrooms.
Place mushrooms in a bowl and toss with remaining ingredients. Marinate at room temp at least 20 minutes, or up to 4 hours. Serve at room temp. Store leftovers in fridge.
Note: You may make them a day in advance but the will darken in color overnight.
