    1-2 cup  diced vegetables, (onions, red potatoes, green/red/orange/yellow peppers, etc)
    1 tablespoon  diced garlic
    1/2 cup  cubed or shredded meat, (bacon, ham, chicken, etc)
    6  eggs
    1 teaspoon  Pepper
    1 teaspoon  Salt
    1/4 cup tablespoons  feta cheese
    1 cup  shredded cheese, (mozzarella, cheddar, Monterey jack, etc)

Pre heat oven to 350º

Saute the vegetables until soft. meanwhile beat the eggs, pepper, salt, and feta together in a large bowl.

Grease small ceramic dishes with olive oil. Spoon a portion of sautéed veggies into each dish. Then pour the egg mixture into each bowl, covering the vegetables, leave between a 1/2-1" before the lip. Top with cheese.

Bake for 20 minutes or until the eggs are set in the center.

Serve in the ceramic dish, on a plate
